We eat other healthy things too…
Ah, I haven’t even started work yet (t-minus 6 days!) and my poor tumblr has been neglected already! It’s been a crazy few weeks of wrapping up some loose ends for the wedding, buying our first car together (and test driving quite a few cars for fun), and cooking to my heart’s content before I start my 9-to-5 life.
I’ve been trying out some new recipes and revisit old ones thanks to pinterest. Despite having a bread machine, I was lazy enough to buy pizza dough from Trader Joe’s (did I mention I love that place?) for a Sunday lunch. All we had to do was roll out the dough with our homemade rolling pin (wine bottle wrapped in saran wrap - we’re classy like that), slap on some spinach, tomatoes, proscuitto, and cheese, and into the oven it went.
The vegetarian lasagna was definitely a lot more work but Kyle had some free time to help roll out the pasta dough with a legit pasta roller. We’re trying to eat less meat so the filling was mushroom, eggplant, spinach, and fresh tomatoes.
I’ve also been playing around with recipes by substituting some of the butter, sugar, and eggs in baked goods with applesauce, flax egg, and nut butters. The muffins, berry bars, and nutella brownies were dense (but still really good!) but I finally figured out how to make a proper flax egg (3:1 water to flax ratio, whisk and put it in the fridge for 15 mins) so I will be churning out some more berry bars this week!
The zucchini chips were really good but not sure if it’s worth all the effort. The stuffed mushroom caps were pretty easy to make but really tasty as well. Just saute chopped mushrooms with onions and feta, plop it onto the mushroom and add some panko on top for some crunchy bits. Shove it into the oven for 20 mins and its good as done!
Our new blender just arrived so I’ll be making fruit (& veg) smoothies all week long. Kyle doesn’t always eat very healthy meals when he’s working super long hours so I’ve been trying to find ways of sneaking in vegetables/fruit when he least expects it!
